Microsoft has announced in a support document that Office for Mac 2011 will not be supported under macOS 10.13 High Sierra. It doesn’t go as far as to say the software will not work, but hints at this.
Well the latest Office 2019 (Nov 10) was released prior to Big Sur (Nov 12). I guess it's possible that Microsoft may end up blocking Office 2019 updates on High Sierra. If not, if you can figure out the url they get the updates from it should be possible to figure out a way to block the update prompts. Microsoft says that versions 15.34 and earlier are not supported, and you may not be able to launch the apps. You are advised to update to 15.35 or later, but even that’s no guarantee.
